Garlic Chicken with Potatoes

Hi and Happy Friday!!!

Todays meal is a full course under 30 minute meal.  This is healthy, filling, easy and oh so good!!  With the holiday season here, it’s hard to find time between all that shopping and baking to get a good meal in.  Who has time?  I know I don’t!  So with this meal, you can easily throw it together with just a few ingredients.

This meal has all the essentials, carbs, protein and fat!  The good fat I might add!

First lets start with the chicken and potatoes.  Just throw it all together with some olive oil and garlic and a touch of paprika, throw in the oven and 30 minutes it’s done.


The last 5 minutes before the chicken comes out of the oven, time to prepare the broccoli and cheese side.  All you need is two ingredients.  Broccoli and Trader Joe’s Con Queso cheese dip.

Microwave the Broccoli for 4 minutes with 1 tbsp. of water, then add 1/2 cup of cheese, microwave for 30 seconds and your done!  How cool is that? This is my favorite new side dish!  You gotta get the cheese!!!  I use it on tacos, taco salad, dipping chips into and now this!  When it’s done you get this!!

Once the chicken and potatoes are done it looks like this…, oh by the way, my Husband encase you don’t know hates sweet potatoes (crazy I know), so I did one potato for me and one regular Yukon potato for him.  I LOVE sweet potatoes.  Whenever I have a potato dish wither it’s french fries, roasted veggies, I always split the potatoes, so we both get what we like.

Garlic Chicken with Potatoes

1 lb chicken breasts

1 lb potatoes , quartered

4 large garlic cloves , minced

1/2 teaspoon paprika

1 teaspoon salt

1 teaspoon olive oil

Directions:

Preheat oven to 425 degrees.

Coat a large baking dish with vegetable or butter spray.

Toss all ingredients together in a bowl and coat well.

Place in baking dish and bake 30 minutes.

Serves 4

Calories for 4 servings of this dish:  243,  Fat:  3.3,  Cholesterol:   65,  Sodium:  104,  Potassium:  546  Carbs:  26,  Fiber 3.4,  Sugar:  2.5,  Protein: 28

Broccoli and Cheese

Ingredients:

5 Cups of Broccoli florets, preferably organic

1/2 cup Trader Joe’s Queso Cheese Dip

Directions:

In a microwave safe bowl add broccoli and 1 tablespoon of water. Cover and microwave for 4 minutes.

Add cheese, stir till covered, microwave for 30 seconds.

4 servings (I could eat the whole bowl for under 160 calories)

Calories per serving:  40,  Fat:  0,  Sodium:  195,  Carbs: 7,  Fiber:  2,  Sugar:  1,  Protein:  3

Nice stats huh?

Well thats it for me and my under 30 minute meal!  Hope you try it out!!

    I love how with this you get a good healthy dinner…and lots of cheese also. And sweet potatoes…are any meals TRULY complete without sweet potatoes? I think not.

    I love quick, easy, delicious meals! Especially around the holidays when I am running around after work. Nice to come home and get dinner cooked in a hurry.

Look at this river of pink! Supertunia Vista Bubblegum by Proven Winners burst with flowers this week.

During July Garden tour, my petunias were looking sad, hardly any flowers. I said how disappointed I was. I followed all the Supertunia rules, spray with BT and fertilize. Then I made a little bit stronger concotion of BT Spray and a few days later, the plant rewarded me with beautiful pink blooms.

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

Hi Everyone! I hope you had a great weekend. I mus Hi Everyone! I hope you had a great weekend. I must say I was disappointed in the Super Bowl. I really wanted the 49ers to win. Anyway, this weekend I refreshed my guest bathroom.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.

Happy Monday!! I have to confess to you. I still h Happy Monday!! I have to confess to you. I still have Christmas in my kitchen.😳 I don’t know where to put it, so I haven’t taken it down. It’s not a lot, but just enough to where I can’t fit it. Ugh!  Please tell me I’m not the only one.

I did do one little spot for Valentines, which I think is so cute. I love decorating with Valentines candy. I can’t resist the pinks and the conversation hearts. I do not plan on going all out decorating this season, as time is going so fast, but I may add some hearts here and there.
