Cowboy Cookies

Hi,

This Sunday I spent 8 hours making cookies, I am so cookied out!  I would be happy if I never looked at a cookie again!  Just kidding, you know thats a lie!  I made 5 different kinds of cookies, I wanted to make more, but I just didn’t have the energy or time, more cookies will come later this month.  So this week I’ll give you the recipes for the cookies.   I haven’t done my food porn pictures yet, I’ll take them tomorrow, but I did manage to take pictures of one set of cookies.  These cookies were suggested by my friends on facebook.  They are Cowboy Cookies.  Have you ever heard of them?  I didn’t, till Saturday night.  There really good and stock full of goodies.  There a heavy cookie, but oh my they taste good.  I did sneak one in today!

These cookies have oats, chocolate, coconut, pecans and dried cherries.  So good!  There easy to make too!!  I’m happy to try a new cookie.  I got the recipe from Joy of Baking.


This weekend I went to Trader Joe’s and I bought some new seasonal items, I’ll update my Trader Joe’s page later this week.

Cowboy Cookies – Adapted from Joy of Baking

3/4 cup pecans, toasted and chopped

1 cup unsalted butter, room temperature

1/2 cup dark brown sugar

1/2 cup white granulated sugar

2 large eggs

1 1/2 teaspoons pure vanilla extract

1 cups all purpose flour

1 Cup whole wheat pastry flour

1 1/4 teaspoon baking soda

1/2 teaspoon salt

2 cups old-fashioned rolled oats

1/4 cup sweetened flaked coconut

1/2 cup semi sweet chocolate chips

1/2 cup dried cherries

Directions:

To toast nuts Preheat oven to 350 degrees F (177 degrees C) and toast nuts for 8-10 minutes or until lightly browned and fragrant. Let cool and then chop into pieces.

Place one oven rack in the top third of the oven, and one oven rack in the bottom third of the oven. Line two baking sheets with parchment paper.

In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugars until creamy and smooth (about 2 – 3 minutes).

Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.

In a separate bowl, whisk together the flours, baking soda, salt, and rolled oats. Add the flour mixture to the creamed mixture and beat just until incorporated.

Stir in the nuts, coconut,chocolate chips, and dried cherries.

Form dough into balls, about the size of a golf ball for each cookie. Place balls of dough on each baking sheet. With moistened hands, gently flatten each ball of dough into a thick cookie.

Bake the cookies for about 14 -16 minutes, rotating the baking sheets halfway through the baking time. The cookies are done when they are golden brown around the edges and just barely set in the center. They should still be soft. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.

Makes 48 cookies

Calories per cookie:  115,  Fat:  6.5, Cholesterol:  18,  Sodium:  36,  Potassium:  33,  Carbs:  13,  Fiber:  1.2,  Sugar:  6.4,  Protein:  1.7

I do hope you try these cookies!  They are so good and all the flavors are just wonderful together.  I am so glad my Peeps on Facebook suggested them!

    Ugh. I made SO.MANY cookies this weekend. And still have two more types to go by the end of next week! I’m a bit cookie’d out. (And by that I mean my STOMACH is a bit cookie’d out.) These look awesome though! Stuffed with goodness.

      I’m sick of cookies myself,however I can’t stop eating them. I keep giving them away, but yet they seem to not be disappearing. lol I guess I’ll start my weight loss in January. 🙂

    This is the best sounding cowboy cookie recipe I’ve seen! The one I tried had Rice Krispies as an ingredient, and they tasted stale after a couple days. AND your have dried cherries…YUM! Need an excuse to add these to my baking list!

      Hmm, rice krispies in it would be interesting, I bet a corn flake type of cereal would work, I’d just omit the oatmeal. The dried cherries make it, it gives it that chewy factor.

Look at this river of pink! Supertunia Vista Bubblegum by Proven Winners burst with flowers this week.

During July Garden tour, my petunias were looking sad, hardly any flowers. I said how disappointed I was. I followed all the Supertunia rules, spray with BT and fertilize. Then I made a little bit stronger concotion of BT Spray and a few days later, the plant rewarded me with beautiful pink blooms.

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.
