Buffalo Chicken Salad and Buffalo Chicken Pizza

Hi,

Hope your having a great start to the weekend!  I got my hair done, and realized how damaged my hair is.  Coloring is the worse thing, don’t do it!  My hair dresser suggested I purchase a  new hair dryer because mine is burning my hair!  Eck!!!  Guess I know my big buy for the weekend is.

Ready for tonights meal? It’s one of my favorites!  Being from Buffalo, I love chicken wings and spicy food!  Franks Hot Sauce is the best!!  What does the commercial say?  “I put that sh!t on everything”!  Yup, I do!!  Franks is what the Pizzeria’s use to make there Buffalo Wings, well I’m using it to make my Buffalo Chicken Salad!  So simple, so tasty, so low on calories!!!

Now make sure you make enough ingredients, for the next recipe!


Looks good doesn’t it? He he, tastes good too!!!  Ok, Here’s the recipe for the salad!

Buffalo Chicken Salad – Serves 4

12 oz of cooked chicken breast – I grilled mine but a rotisserie chicken will work too!

2 Tbs.of Franks Hot Sauce or what ever your favorite hot sauce is

1 Tbsp.  Fat Free Cream Cheese

4 Cups Shredded Romaine Lettuce

2 Stalks of Celery – diced small (I used my mini food processor)

1/2 Large Carrot – diced small (I used my mini food processor)

1 Large Tomato – diced

12 Tortilla Chips – I used Guiltless Gourmet

8 Tbsp. Bolthouse Farms Blue Cheese Yogurt Dressing (ranch will work too)

In a medium bowl, shred your chicken, add cream cheese and hot sauce and mix well.  (A little note:  For a future use, you can heat this, add more cheese and make a dip)

On each plate, add your lettuce, tomato, celery, carrots and chicken.  Add your Blue Cheese Dressing and crumble 4 Tortilla Chips on top.

Calories:  172,  Fat:  2.7,  Cholesterol:  60,  Sodium:  419,  Potassium:  384,  Carbs:  11.1,  Fiber:  2.7,  Sugar:  .8,  Protein:  27

I love this dish!!  Forgot to mention, it’s a fast dish!  Only a few minutes to put together!

Hope you saved some ingredients!  It’s hard not to pick at the chicken!

Now that you saved some left overs you ready to make pizza?

Before Putting it in the oven!

Out of the oven!

Buffalo Chicken Pizza

1 Flat Out Bread Wrap – I love these, at 90 calories a wrap – A tortilla shell will work too, go low Carb!

1 tsp. Olive Oil

Left Over Chicken from above recipe

1 oz Low fat Mozzarella Cheese – shredded

Left Over Carrots from above recipe

Left Over Celery from above recipe

Fresh Spinach Leafs, just a few  is neeed

1 Tbs. Sundried Tomato’s – Optional, fresh will work too!

Splash of Franks Hot Sauce – I used more then a splash

1 Tbsp. Blue Cheese Dressing

Preheat oven 400

Line a baking sheet with Parchment Paper.

Place Flat Out Bread on Parchment Paper.  Add your Olive Oil, Top with Cheese, Celery, Carrots, Sun Dried Tomato, Chicken and Spinach Leaves.

Place in oven for 6 minutes, watch that the wrap/tortilla doesn’t burn.

Add Hot Sauce and Blue Cheese Dressing!

Calories:

278,  fat:  11,  Cholesterol:  42, Potassium:  98,  Carbs:  24,  Fiber 10.7,  Sugar:  4.7, Protein:  28

Love all that Fiber!!!

This had so much flavor and I really liked the Sundried Tomatoes on it!

Hope you enjoyed my Buffalo Salad and Pizza!  Which one will you choose?  Hell with the calories, have the salad, split the pizza!  Makes for a great appetizer!

I have been on a spicy kick!!!  If you really want to kick it up a notch, in your cream cheese, chicken mixture, add some fat free cheddar cheese!   That’s good too!!

Look at this river of pink! Supertunia Vista Bubblegum by Proven Winners burst with flowers this week.

During July Garden tour, my petunias were looking sad, hardly any flowers. I said how disappointed I was. I followed all the Supertunia rules, spray with BT and fertilize. Then I made a little bit stronger concotion of BT Spray and a few days later, the plant rewarded me with beautiful pink blooms.

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

I have been decorating the house for Easter and Spring. I love how this little space turned out. I am loving the bright pastels. I added my new bunny/chick pillow that I got from @12timbers. It matches so perfectly and it’s so cute. I also couldn’t resist the chick pillow from Target.

Hi Everyone! I hope you had a great weekend. I mus Hi Everyone! I hope you had a great weekend. I must say I was disappointed in the Super Bowl. I really wanted the 49ers to win. Anyway, this weekend I refreshed my guest bathroom.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.
